move over monday.

As of 7:21 pm last night, spring officially sprung. So when I woke up this morning to a snow storm, I was slightly confused. Instead of dreading the weather, I smirked at the sky. I love how crazy and unpredictable the weather is. I made myself a coffee, sat in my chair and a half by the window and watched the snow fall. Soon after, got myself ready for work and proceeded to spill a cup of coffee on my coat and shirt. Instead of getting completely frustrated, I decided to consider myself lucky that it happened at home and that I could change before I left. The rest of the day seemed to pan out okay, but sometimes the gloomy weather can bring you down. 


To brighten the spirits, I made cookies. And boy were they tasty!! Just a small batch though, so I wouldn't eat every single one. I made a basic chocolate chip cookie form The Joy of Cooking, but instead of chocolate chips, I found these really delicious miniature peanut butter cups form Loblaws. OY! So good!!



Chocolate Chip Cookie
Preheat oven to 375
Bake 10 minutes

Cream and Mix:
1/2 cup butter
1/2 cup firmly packed brown sugar
1/2 cup white sugar

Add and Beat in:
1 egg
1/2 tsp. vanilla

Slowly mix in:
1 cup and 2 Tbsp. flour
1/2 tsp. salt
1/2 tsp. baking soda

Add:
1/2 cup of chocolate chips

My Adjustments:
Omit white sugar, use 1 cup brown sugar. 1 tsp. vanilla. 1 cup of peanut butter cups.
