cookies.

Last week, during my snow day, I baked some cookies! I have to say, I make a mean Oatmeal cookie, but my Peanut Butter cookies are mighty fine as well! These are the exact recipes from the Joy of Cooking, but I tend to change it up (ie. using just brown sugar, unbleached flour, different herbs & spices, more vanilla, etc...)


Oatmeal Cookie
Preheat oven to 350
Bake 10-12 minutes

Cream and Mix:
1/2 cup butter
1/2 cup firmly packed brown sugar
1/2 cup white sugar

Add and Beat in:
1 egg
1 Tbsp. milk
1 tsp. vanilla

Slowly mix in:
1 cup flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder

Add:
1 cup of rolled oats

Optional:
3/4 cup raisins, chocolate chips, marshmallows, slivered almonds, whatever your heart desires




Peanut Butter Cookie
Preheat oven to 375
Bake 10-12 minutes

Cream and Mix:
1/2 cup butter
1/2 cup firmly packed brown sugar
1/2 cup white sugar

Add and Beat in:
1 egg
1 cup peanut butter (try chunky, so good!)
1/2 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking soda

Slowly mix in:
1 1/2 cup flour

Optional:
Chocolate Chips, Peanut Butter Chips, Butterscotch Chips

When you have your peanut butter dough, roll into little balls of goodness.
Place on cookie sheet and press down with a fork
